The word Nougat first appeared in the 16th century : it was called “nogat”in the Middle Ages, Nougat originates from the sunny Provence, ever since a French southern dialect changed “noga” into Nougat (“nux, nucatum” meaning walnut in latin).
It was originally a cake made with honey and candied nuts.
The traditional shape of nougat and its new recipe are distinctive of the Provence. In the 16th century, pastry cooks started using walnuts instead of almonds, and in the 19th century sugar began to supplement honey.
Glucose was then added as a new ingredient in the 20th century.
It seems that Nougat was first made near Marseille in the 16th century, Then Montelimar established itself as the main producer. Almond trees -native to Asia and Greece- were introduced by Oliver de Serres into his domain in the Ardèche near Montélimar. Thereon, pastry cooks would made Nougat twice a year, at Easter and Christmas.
In January 1701 the nougat of Montélimar became part of History.
The dukes of Bourgogne and Berry – grandsons of the king Louis XIV – had just been to St Jean de Luz where their brother Philip of Anjou was to be crowned as the king of Spain . Whilst going across the Languedoc and Provence, they stopped at Montélimar, where they were presented with a gift of a hundred kilos of white Nougat.
Ever since we have been making two kinds of Nougat : black and white. There are many varieties of white Nougat.
The first legend comes from Montélimar. A grandmother used to make candy for her grandchildren while telling them fairy tales, and the children would cry out: “How you treat us ! You really treat us!” (in French: “Tu nous gates, que tu nous gâtes!”)
The second one is the tale of a young kitchen boy in love with a beautiful princess. One day, whilst thinking of her, he poured into a copper pot :
